Quiche a la Lap Band Gal!

Here's an easy go-to meal that I sometimes have on the weekend.  

Mix up the following items and pour into a ramekin or mini quiche dish sprayed with cooking spray.  Bake at 375 F for 20-25 mins.   Total Calories: 275   Total Protein: 37 grams

1 Container of Egg Beaters: 60 cal  12 g protein
+
3 oz left over chicken breast:  120 cal  20 g protein
 +
Spicy Three Pepper Hummus (2 TBSP): 50 cal  2 g protein
+
1/2 oz cheese: 45 cal   4 g protein
=

YUM!

  7. What an awesome idea! I keep a tupperware in the fridge for leftover veggies (a few florets of broccoli, a slice of grilled onion, a tablespoon of corn, etc.) and that would be great to throw in too to use up the leftovers. I usually just heat that up and call it a veggie blend, but it would be even nicer in a quiche.

  9. Yummm!!! That looks delicious!! Quiche is like my favourite meal ever....except I used to make it with like four eggs, heavy cream and bacon. Hahaha no wonder I needed a lap band. This looks like a delicious alternative, thanks for the recipe!!

  12. I wish I could figure out an alternative to eggs. I have this HUGE aversion to them, but would love to be able to make more high-protein items. Cheese and chicken it is right now. LOL!

    I'll have to experiment some more in the kitchen!
