Chicken Pesto Alfredo Recipe!

This is one of my new favorites...YUM!  It reminds me of something I used to eat at Olive Garden.

Stir all of the following up in a small bowl and microwave in 20 second increments until heated through.  Stir after each 20 seconds.  About a minute or so all together.
  • 10 g of Pesto = 47 calories; 0 g protein
  • 40 g of Alfredo Sauce = 46 calories; 1 g protein
  • 3 oz chicken breast cooked chopped up = 140 calories; 26 g protein

Serves 1.  TOTAL: 233 calories; 27 g protein

Sorry for no pic of what it looks like when it's cooked/finished... I ate it before I remembered to take the pic. YUM!

PS: if you don't have a food scale yet, get one...in my opinion, it is one of the best tools...period.

  1. 1 word- YUM! That looks fantastic. I buy that sauce all the time to use in recipes, but never thought of using it on chicken without pasta. Brilliant!

  2. yum may have to have that for dinner tomorrow..thanks for the recipe :)

  3. I use my scale all the time! I agree best kitchen tool...right next to my kitchen scissors. I have all of those things in my kitchen! Perhaps I will have it for dinner tomorrow!

Can I ask...how do you get your veggies in? I have been eating mostly protein and adding fiber to it like crazy the last few days. I am full after a little protein!

  4. that looks yummy, I think we will give it a try soon. Thanks for the quick yummy recipe.

  5. This looks sooo good..and given it is microwaveable, it definitely helps the chances of me making it! thanks!

  6. Sounds like a really tasty combination.

I have a food scale and weigh everything on it - you are right its a necessary tool if you want to loose and maintain !

  7. Sounds incredible! Can't wait to try it!

  8. Sounds like a yummy quick meal :o)

  9. I don't have a scale and don't know how much a gram is =/

But I will just wing it!

  10. Thanks for sharing this. I just had this for lunch, and it was super yummy! I used canned chunk chicken (since I'm still on blended) and Quadrupled the recipe since the can is 12oz, I then divided it up into a few 6oz batches for another time. I am not a cook by any means, but I really did love this! Thanks again!
