Jen from Jen is Gonna Lose It inspired me with her post today about a usual lunch/meal that she eats. I gotta try that yummy avacado/tuna mix up!
Here's something that I have been eating pre-op, post-op, etc. Approximately once week... I love Ling Ling Potstickers! I usually make a thai peanut dipping sauce using the sauce packet that's included with the potstickers. I mix up some of the sauce packet with a teaspoon of PB, a splash of water, and a teaspoon of splenda. whisk it up. yum.
I also only boil them for 10 minutes, no frying here.
I eat four of them for a perfect bandster portion. Here's a pic from tonight's dinner (see my mini-cocktail fork?):

I never would have thought those are bad friendly. Where do you find those? I love peanut satay sauce...that looks so yummy!

ReplyDeleteThat's a favorite of mine, too and I'm not even banded yet!! My local grocery store carries a few different brands and Trader Joe's are great, too.
ReplyDeleteI actually microwave mine. I splash a bit of water over the potstickers to get some steam going and cover the dish with plastic wrap. So easy....
I should try and doctor up the sauce a bit, your "recipe" sounds perfect.

ReplyDeleteI love any type of DimSum/Potstickers/Dumplings, however, I find they aren't to friendly for me...So glad that you can eat them!
ReplyDeleteSo interesting what works for some that doesn't work for others. For example: I am an egg fanatic, and some people have trouble. I would not immediately go for pot stickers at ALL! But-- this certainly looks YUM! You are doing so great. but the way.

ReplyDeleteJust doing some catching up and you look like a totally different person ! Just amazing !!! Love dumplings..totally with you there..I can live off of these things for days at a time. Rickshaw bar here in manhattan is my dumplings dealer !! LOL

Congrats on the success that you have had so far! I look forward to seeing your journey! I see that you go to a support group...I assume this is for the band? Do you find the support group to be helpful?
